Acrobat Server: Open/Read/Export XML form filed data?

Is there such a thing as an Acrobat server that can be set up to receive incoming PDFs, open them, and then export the form data to an XML file?

I am open to any suggestion that might satisfy requirements as follows: We have PDFs that have form field data entered by various clients. We want to be able to systematically create a workflow that would allow our IT department to code some method to pull in PDFs that can be opened/read and then output the form field data as an XML file. I am not a programer, so I apoligies if I am missing a simple solution.
