Toggling back and forth between the two views does seem to work, as long as you go slow. Hopefully Adobe can work out a patch in the future to eliminate this issue with Win 8.1.

I added text to a flat pdf to fill in lined blanks using the "add text" command and then saved it. I needed to go back in to correct some of the text entries I made; however, common sense told me to go to Tools and then Edit text. This would only let me edit the text behind what I typed in the blanks, i.e. the underline. I have not been able to find any instruction on correcting added test. Any suggestions would be welcome.

It probably won't convert a PDF form to an HTML form.
You might want to look into Adobe's FormsCentral service. You can use it to create a web form, and once it's set up, export to a PDF form. This gives you the best of both worlds. The web form can be used by most anyone via their browser, and the PDF form can be used by those who may want to be able to fill it in while offline and submit when they have internet access. The form data is submitted securely to the FormsCentral server and you don't need to know all of the tricky details about setting up an online form. The responses can be accessed by anyone on your team and individual responses can be downloaded as a filled-in PDF form (for printing, archiving, etc.) The responses table can be downloaded and easily opened in a spreadsheet or loaded into a database for further analysis. I think the price is quite reasonable, and no, I don't get any benefit if you sign up.

There is a "Custom configuration" option that allows you to choose a "Content Only" "View Mode". Additionally, among others, the service allows you to download the generated html and resources as a zip file where you can host, well, anywhere. I thought it was pretty schlick. Have you tried it?
This can be a bit confusing. Acrobat 11 included the FormsCentral desktop application, which allows you to create simple PDF forms. It also allows you to connect to the FormsCentral service so you don't have to use the browser-based interface. This desktop app that's included with Acrobat 11 does not include an actual subscription to FormsCentral that's equivalent to the FormsCentral Plus plan, UNLESS they've changed things since Acrobat 11 was first introduced. Initially, Acrobat 11 users were allowed to set up one form with the service for free, but there were certain limitations (number of responses stored, no download to PDF, etc.)

I have a form with a few dropdown fields in it. When I select a field called Cost Centre some code populates some other drop down fields with names in them. The Run Custom Validation Script is set out below

The Current_Manager fields populates as expected, however, the Authorising_Manager field does not
Is there a limit to the number of options you can have in a list? Both fields are identical but I cant work out why the Authorising_Manager field wont populate

Do the items in the "Authorising_Manager" field have export values? Do you see any errors in the JavaScript console when you select Ctrl+J? You might also check that the items in the field have that exact spelling (no leading-trailing space, capitalization is correct, etc.)
The thing about HTML forms is that anyone can build a form in a few minutes, and starting from PDF is hardly the way to do it. No doubt the original form is in Word. The point is that, behind every web form, there is a web script written by a professional web programmer. This is also true of PDF forms: mailto is a toy for testing. Even if it wasn't, the privacy implications of asking people to email their personal details are serious; in the EU there would be unlimited fines for that sort of thing.
How do I select the "distributed" version of my form in order to see the responses? When I click it, it opens the "distributed Form" rather than going to the PDF Portfolio?
I need to make fill-in forms with little space between questions. Adobe Acrobat XI Pro does not allow me to alter fields and sizes as I need to. Advice?

Is the Snap to Grid option ticked under View - Show/Hide - Rulers and Guides? If so, un-tick it.

The responses can be added to an excel worksheet using "Forms => Manage Data => Merge Data Files into Spreadsheet".
I want to make a form in adobe X, similar to an order form or requisition form. but I want to add rows an columns of the table automatically ad needed rather than having a set number from start. the form also have other objects above and below the table, so they should move as the rows are added! is there anyway to do this in adobe Not liveCycle!
